What is CHEF?

A major highlight at FoodService Australia 2008 will be the CHEF Australian Championships, a new event set to become Australia's premier senior individual hot cooking competition.

In contrast to the typical team-based competitions, CHEF will be more along the lines of 'Big Brother meets Iron Chef'! Individual chefs will be required to prepare a minimum of three dishes from an ingredient list sourced from exhibitors at FoodService Australia. Each competing chef will receive a list of exhibitors and their products from which they must choose three main and five additional ingredients. They'll have 30 minutes to 'go shopping' for ingredients from the floor and another 30 minutes to write a menu. This will be followed by two hours' prep time and then - the heat is on!

Twenty-four chefs are expected to compete over the three days of the show, with the event held in the Chefs Theatre right in the middle of the show floor. This features seating for 60 people as well as extensive standing room so the pressure will be intense as all participants compete in front of the live audience.

Highly respected Black Hat Chef George Hill will be leading the panel of judges. There will be four judges in the kitchen focused on cleanliness, sanitation, work habits, prep, use of ingredients and workflow, as well as a panel of three tasting judges. The scores of both judging panels will be combined and the winning chef will be the one with the highest total score.

Gary Farrell of the Australian Culinary Federation will be administering this event with the assistance of Exhibitions and Trade Fairs (ETF).

The Chefs Theatre will also host additional presentations during breaks in the CHEF competition by professional chefs including representatives of the Australian Culinary Federation.
